Afghan cuisine combines the flavors of Turkey, Greece and India and adds its own spices. The results, as you'll learn from dining at Kabul, are interesting. Consider an appetizer such as "pakawra e badenjan," chunks of eggplant dipped in a light batter, then sauted to crispness and garnished with the contrasting tastes of yogurt and meat sauce. The lamb and chicken entres are reminiscent of Indian-style tandoori cookery: tender meat seared on the outside, moist and delicate within. Kebabs, especially lamb, are tender and cooked to order. Vegetarians will revel in the wealth of choices, including a stew of spinach, garlic and onions, and pumpkin dumplings in yogurt. Both locations have comfortable dining rooms and efficient service, but the wine lists are rather weak.
