With more than 40 wines offered by the glass, and 300 by the bottle, this modern cavern of a club is bound to have a vino for you. Pours come in 2.5-ounce tastes and 5-ounce glasses. If you're not sure where to begin, order the weekly tasting flight, or query the helpful staff. But be warned, if you refer to the lengthy wine menu, descriptions like "fresh gooseberry, apricot and bosc pear" or "rich cinnamon, almond and baked caramel apple" will start your stomach to growling. Cav's menu is organized by "Bites" -- crudo, charcuterie, and antipasto, "Sides" -- okra frites, buckwheat polenta, and spinach with raisins and toasted almonds, and "Plates" -- oxtail ravioli, pork tagine, and Columbia River sturgeon. The Mediterranean-skewed menu changes with the availability of the Bay Area's freshest ingredients. A long zinc bar, pendant lighting, and red walls make for a sleek and sophisticated spot that shines a light on the once overly passed-over Hayes Valley.
