Instead of a Maitre'D, racks of short loins, Porterhouse and T-bones greet you -- behind glass cases of course -- in this elegant, slate-floored steakhouse in Cupertino's bustling Valco shopping center. After you walk the red meat guantlet, a hip, but cozy lounge with fieldstone hearth and a red and black-tiled granite bar introduces you to a series of huge dining rooms. The oversized tables dressed in heavy linen, china and cutlery provide spacious settings for a beefy extravaganza. The menu is huge, literally and figuratively. Salads and soups, small plates and wines by the glass share large-type space with sections entitled, "On the Bun," "Entrees," and "Steakhouse Favorites." All choices are either imported Kobe, certified Angus beef or USDA prime choice and aged at least 28 days. A simple sides menu includes mashed potatoes, braised red chard, roasted artichoke and truffled French fries. With all this hoopla, the most intriguing dish here is not on the menu; you must request it, even though it's complimentary to every table. You'll see your fellow diners pulling wisps of it in every color of the rainbow, off county-fair-like cones as they retreat to the parking lot. You guessed it: cotton candy.
