You're lounging on a soft-cushioned seat arranged around a circular brass table. To prepare you for your first course, the waiter pours warm water over your hands (you'll be eating with these). Fabric drapes the walls to simulate a Moroccan tent, creating a sense of mystery. When the kitchen is on target, the best dishes are the b'stilla, a light, flaky pie filled with chicken and almonds and topped with powdered sugar; the spicy merguez sausage with couscous; the roast chicken with preserved lemons and olives; and the lamb tagine. Koutoubia will even cater a Moroccan feast in your own home -- complete with tent.
