Get your country-western fix at Matty T's Roadhouse, a honky-tonk joint smokin' smack-dab down in the heart of Nashville, right next to the Grand Ol' Opry. Well, OK -- it's really across from a Kohl's and a Home Depot on Commack Road in the heart of white-bread suburbia, but step inside and you might as well be in Cowboyland. The roadhouse has been hee-hawing for more than 25 years -- not bad for a place that started out as a quiet, subdued Italian restaurant. The big draw is Spike, billed as Long Island's ''original'' mechanical bull (call the bar for the schedule of bull-riding contests). DJ-spun tunes and live music from bands such as local favorites Six Gun keep the line-dancing going full-saddle (novices can take advantage of the free dance lessons). Ladies nights and drink specials are offered weekly, and country crooners take to the stage to sing a sad song or two at Thursday's ''Karaoke Ugly.''
