Jimmy Pieprzyca didn't hesitate when The Palms resort asked him to leave Chicago to serve as assistant general manager of their nightclub, Rain. He didn't mind leaving the skyscrapers and the Art Institute and the Cubs, but Jimmy almost packed his bags when he discovered there was no place in Vegas to find a genuine Chicago-style pizza. Fortunately for The Palms and the city's other Windy City transplants, he decided to do something about it. Papreza's flies in its cheese from Wisconsin and its sausage from Chicago, resulting in an authentic deep-dish pie worthy of Oprah, Sammy and Michael Jordan. The crust is as thick as an alderman's wallet, and a layer of tomato sauce is ladled over the finished product, in the tradition of such Chicago landmarks as Nancy's and Lou Malnati's. This is a pizza so heavy with goodness you might need help carrying it home, and one that almost has to be eaten with a knife and fork. The small size feeds at least two, and the large would satisfy a football team.
