Jean-Philippe Maury, the Bellagio's executive pastry chef, introduced Las Vegas to its first upscale pastry shop. Maury, who led his World Pastry Championship to gold numerous times in the past few years, has even whipped up some healthy treats for guests, such as the sugar-free, three layer chocolate Napoleon. Another first is that the patisserie features interactive food stations, such as crepes, sandwiches, Danishes, cakes and sorbet/gelato (Maury's French training deemed him a master in the last two areas.) And if you're wondering whether or not such items featured at other Bellagio dining venues are the work of Maury, the answer is yes -- the chef oversees a staff of 75 who produce more than 15,000 pastries daily. Signature creations include Nutella brioche with caramelized hazelnuts, coconut creme cake with creme brulee and candied pineapples with coconut crisp. Extravagant wedding cakes are also available for order.
