Chez Paul has been a perennial favorite on Maui for years, but it has had a great boost with the addition of Patrick Callarec as the new chef-owner. In collaboration with the previous owner, Lucien Charbonnier, Callarec has brought new life to this classic French restaurant in, as they say, "the middle of nowhere." Look forward to chilled fennel and potato soup, homemade duck pat, beluga caviar, escargot, Kona lobster with fresh foie gras and tournedos of beef in three-peppercorn sauce. This is a fine French restaurant by any standard, but Maui casual.

France on an Island
As a local, I've been to Chez Paul many times and have never had a bad experience. From the moment you arrive, you feel like you are in a bistro in France! The food is excellent and classic using traditional French foods and local Maui foods. I'll be back!
