No cookie-cutter dal house, Ambassador of India has to be one of the prettiest restaurants (Indian or not) in the Greater Hartford area. The colorful wall paintings, shiny copper lamps and white tablecloths immediately suggest this is a serious dining adventure. And, in fact, it is. Others may elect to toss their potatoes and cauliflower in indiscriminate gravies, but not Ambassador. Here, the Indian cuisine is treated as it should be: as a thing of beauty and majesty. That is apparent with the excellent breads, pulled puffing and hissing from the authentic tandoor. That oven also produces succulent tandoor dishes like salmon or chicken emerging from the inferno deliciously moist. The kitchen enlists its army of spices to invigorate sauces and rubs that bring out the best in seafood, meats and vegetables. The flavors are true and, often, surprising -- not the least bit muddled. Vegetable dishes are particularly good here. Ambassador of India is a worthy ambassador for this brilliant Asian cuisine. The restaurant deserves to be much more popular.
