One taste of the salsa and you know they mean business at El Rincon -- the menu is dense with Mexican favorites, every one a winner. If the chips and salsa appetizer isn't enough to satisfy, try the chili con queso or guacamole -- or better yet, just save room for the entree, the portions are generous, to say the least. Speaking of those bountiful servings, consider ordering the house favorite, the Vallarta Special. No less than two burritos are stuffed with fajitas, served with rice, guacamole, refried beans and covered with an ample blanket of cheese. Another good pick is Bistek ala Mexicana -- steak and shrimp topped with onions and pepper and served with all the accoutrements, including a ripe avocado slice. After all of this, how about some desert? Try the fabulous flan, or the Mexican favorite sopapillas, which is a delectable fried tortilla made with honey, butter and cinnamon. -- Marie Andrusewicz
