Restaurant vet Alex Dana credits his grandmother and mother for the authentic Italian recipes he uses at his many eateries around the Chicagoland area. It all began with Rosebud, a simple, rustic restaurant established in 1977, as Dana introduced local diners to chicken Vesuvio, a pan-roasted chicken in garlic white wine sauce and served with potatoes and peas. He followed that up with the homemade signature "square noodle" pasta as well as cavatelli and ricotta dumplings. As one of historic Taylor Street's original attractions, Rosebud continues to receive a steady number of dining enthusiasts, from long-time patrons to tourists and celebrities. In addition to the signature entrees, diners come for such dishes as the spaghetti marinara with meatballs, veal marsala and strip steak Vesuvio. Other Rosebud restaurants include Carmine's, La Rosetta, Rosebud on Rush and the latest, Ballo on Grand Avenue.
