Southern fried chicken stalwarts KFC and Popeye's get competition from South America as the first of a growing chain of Latin-focused chicken restaurants blazes into Chicago's Brickyard Mall. Pollo Campero, founded by Guatemalan businessman Juan Jose Gutierrez, serves moderately priced country chicken in a cheery and family-friendly atmosphere. Choices include the signature fried chicken (marinated, breaded with a secret formula, then slowly cooked for a tender, yet crunchy texture), Rotisserie chicken (marinated with special seasonings and a secret formula, then baked in rotisserie ovens), Camperitos (chunks made from 100 percent chicken breast) and chicken wings (come with barbecue or hot sauce). Complement chicken with Latin-flavored sides like the spicy rice (seasoned rice and vegetables) or crispy tostones (a traditional Guatemalan dish made from fried plantains). For the Chicago venture, Gutierrez teams up with Larry Levy of Levy Family Partners.
