With Randolph Restaurant Row crowded with superb supper spots, the off-the-beaten-path Fulton Market is now becoming the hip dining destination for the see-and-be-seen crowd. Moto, an Asian-influenced, avant-garde restaurant, is the latest to hit the area, joining such delights as Follia, Fulton Lounge and Rushmore. Directing the kitchen is former Charlie Trotter's sous chef Homaro Cantu (who trained in Charlie's kitchen for three years), and who was also trained at the Cordon Bleu in Portland, Ore. As executive chef at Moto, Cantu shakes Chicago's dining scene at its foundation with his unique spin on cooking. This culinary king brings on what he calls food engineering: His creations consist of a mixture of delicate food preparations and mechanical ingenuity. For example, his sushi platter feature squares of tuna-and-rice-flavored paper instead of fish, and the Caesar salad boasts a delicate spoonful of romaine-flavored ice cream. And dieters craving dessert can certainly cheat as Cantu's take offers a bite-sized ravioli designed to taste like the creamiest birthday cake.

Service was tremedous--food was an experience--I will never forget eating here. However, the moderate price rating is way off. Plan on spending 150 to 200 hundred per person easy.

Other Worldly

An astounding display of culinary virtuosity. This is Monty Python meets nouvelle cuisine. We couldn't stop laughing, the food was so much fun. I haven't enjoyed myself this much since Tonto's bar mitzvah. Go now, really.

A new awareness...

Chef Cantu is magical. His use of food and materials are equisite; presentation being everything. Four pre-fix menus are offered: five, seven, ten, and twenty based on the number of courses. Each table is asked to order the same number of courses. I highly recommend taking advantage of Chef Cantu's passionate Sommelier whose passion for wine and food adds to the sensual mood of the food. We dined on Saturday, March 6 and while the restaurant was quiet, the service was symmetrical and focused on your dining experience. Don't be shy - ask for a tour of their spotless and incredibly efficient kitchen. Seeing the creativity behind your dining experience finishes the evening in the most subtle way. Take the chance to experience extreme dining. Spread the word of this newly minted gem in our fabulous Chicago!
