Wing size
I think overall, people who are not from this area expect big, oversized wings that look like they were on steroids. In preparing good wings, you need a uniform, small wing so that it cooks properly. The wings should be nice and crispy on the outside, and cooked fully on the inside.
I am from Colorado, and most of the wings out here (aside from lame sauce), is the fact that the wings are huge, hence, you end up with a undercooked, "raw", nasty wing. I ordered some sauce to make wings, and when I attempted to buy the wings, all I can find are wings that look like a damn chicken leg. I am going to go to a real butcher to see if I can find small, standard wings?
The joy of these wings is in the sauce, not how much chicken you can milk out of the wing. Anyway, enjoy your big, raw, wings anyway! More Reviews

Curly's son Paul (an accomplished SJCI athelete) took over and ran the place as a neighborhood bar until his daughter Chris and her hubby(boooth trained chefs) came home an turned it inrto a Fine dining place,while maintaining the old neigborhood charm... PAUL MAY EVEN BE BEHIND THE BAR,
