But, there are some places, like Rolling Bones, that actually provide a clean, inviting atmosphere in which to enjoy your 'cue. Housed in a converted 1940s gas station, Rolling Bones serves Texas-style barbecue. Unlike the Deep South style of 'cue, which goes heavy on the sauces, Texas-style barbecue is slow cooked over mesquite, without spices or sauces. These are only added afterwards if you prefer, and you just may, since Rolling Bones is also known for its tasty sauce. Chicken, pork and beef are available in a variety of forms, as well as all the favorite sides, such as fries, potato salad, cole slaw and beans. Rolling Bones also does catering in case you want to set up your own tent off the side of the road.
