OK, let's get this out of the way. Yes, technically Pappadeaux is a small chain, but what an outstanding job the Pappas family has done with the two locations in our city. The first thing that will strike the new diner is the authentic-looking 'historic' building -- seemingly plucked straight from the bayou, with plenty of exposed brick, aged wood and character. Pappadeaux exemplifies upscale New Orleans with a relaxed grace and elegance, and a taste for fine spicy cuisine. It is the food that brings the crowds, which often have to wait in the ritzy bar area or outside in the brick courtyard near the fountains during peak times. Try the shrimp or crawfish etouffee or one of the many seafood dishes (prepared blackened, pan-broiled, charbroiled or fried) for a taste of the Gulf coast. A wonderful, although slightly pricey ($20- 30), dining experience for the adventurous palate. -- Kevin Sechrist
